Preheat oven to 350 degrees. Spray muffin tins with non-stick cooking spray.
Blend together thoroughly wiht wire whisk in large mixing bowl:
1 egg
1/2 cup honey
Blend in:
1 cup mashed pumpkin or butternut squash
1/4 cup water
Blend dry ingredients together in separate bowl:
2 cups whole spelt flour (use can use any whole grain flour)
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp baking soda
1/2 tsp salt
1/2-1 cup chopped pecans (can use any nuts)
Ingredients:
Blend dry ingredients into liquid ingredients just until smooth.
Fill muffins tin until full. We love to make mini muffins.
Bake at 350 degrees for 15-20 minutes for mini muffins and 20-25 minutes for regular muffins.
These make great "cupcakes".
